Black Bean Dip

3 plum tomatoes, diced
2 tablespoons diced red onion
2 tablespoon cilantro, chopped, plus sprigs for garnish
2 (15-ounce) cans black beans, drained
1 tablespoon ground cumin
1 jalapeno, seeded

1 garlic clove

1/4 cup light sour cream

1/2 tsp salt and 1/2 tsp pepper


Place the tomato, onion, cilantro, jalapeno, and garlic into the bowl of a food processor and pulse until well chopped. Add the black beans, cumin, sour cream, and salt and pepper, to taste, and pulse until the mixture is mostly smooth. Scrape into a bowl and garnish with cilantro sprigs.  Serve with whole grain tortillas or chips.
