Chicken Caprese Pasta


2 medium chicken breasts, grilled and chopped

1 lb. Penne Pasta

2 cans tomatoes with basil, oregano, garlic

2 garlic cloves finely minced

1/2 lb mozzarella, cut into small cubes

3 tablespoons balsamic vinegar

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

Pinch of cayenne pepper to taste, optional (for a kick!)



In a bowl combine tomatoes, olive oil, balsamic vinegar, garlic, and mozzarella cubes.  Season to taste with salt, pepper, and cayenne (there is sodium in canned tomatoes so go light on that).  Toss and let sit at room temperature for about 20 minutes.

Grill/bake chicken until cooked through, chop into cubes.

Prepare pasta according to box directions.  Drain the pasta, and combine with chicken and tomato mixture then toss all together.  Adjust seasonings to taste and enjoy!
